Q. What is the difference between milk chocolate and dark chocolate? What do they put in dark chocolate to make it dark?
A. It's not what goes into dark chocolate. Milk is what gives milk chocolate its smoother taste and lighter color.
Though ingredients may vary by manufacturer, according to the trade group Chocolate Manufacturers Association, the basic ingredients in both chocolates are chocolate liquor (despite its name, distilled chocolate, not an alcohol), sugar, cocoa butter and vanilla.
But in dark chocolate, the chocolate liquor is usually about 55 percent cocoa butter. There is even more cocoa butter in milk chocolate, which also contains milk, ...
