THE CHINESE MAY SEE 2008 AS THE YEAR OF THE RAT, BUT IN THE EYES OF THE UNITED NATIONS IT'S THE INTERNATIONAL YEAR OF THE POTATO.

"Every country which has a major potato industry will use the Year of the Potato as a tool to one degree or another to indicate what they will be working on, and most will be communicating nutrition because collectively we all see the value in delivering nutritional messages and recipes," says Tim O'Connor, president of the U.S. Potato Board in Denver, a trade group representing the nation's potato industry, except for sweet potatoes, which are promoted by their own state and regional associations.
