Brussels sprouts are related to cabbages. The numerous swollen buds grow on tall stalks. The vegetable is often found in local farmers' markets with the stalk. Brussels sprouts are quite hearty; they'll not only endure a deep, chilling frost, but their flavor actually improves with the cold. They are among the last vegetables harvested each year.

The smallest brussels sprouts are the mildest and sweetest. Select firm, deep green sprouts, preferably still on the stalk. Avoid buds with yellowing outer leaves, shriveled stems, wilted or soft flesh, or sprouts that show rot or insect damage.
