One of my favorite cool weather vegetables is plain baked sweet potatoes. Eat them hot from the oven _ slit open the skin, work some butter into the moist orange flesh and enjoy a rich, filling and healthy (if you go easy on the butter) treat.
Sweet potatoes are a good source of vitamins A and C, carbohydrates and fiber. They also contain calcium, iron, potassium and niacin and have slightly more calories than white potatoes, according to ``Jane Brody's Nutrition Book.''
