Q How easy is it to make a souffle. I want to make one as a savoury starter, probably with goats cheese.

A MOST people think of souffle as being extremely difficult. I believe as for any dish you need a good foundation or basic recipe to work from.
A goats cheese souffle or savoury souffle is made from a basic bechamel sauce bound with egg yolk to which stiffly whisked egg whites are added.
During the cooking the air trapped in the egg whites expands and increases the volume of the preparation which must be served immediately before it collapses.
