Food processors. Not only do they slice, dice and julienne, they save time and money. "We use ours for just about everything," says Jim Lacona, who opened Lacona's on Fifth in West Des Moines, Iowa, about six months ago.
Purees, pestos and cut vegetables all are the work of the processor, says Lacona, who figures the processor's worth at about half a person. "It has cut an hour a day from prep time," he comments.
Aaron Aversa, executive chef of Public Landing, Lockport, Ill., says his processor takes the place of at least one, possibly two employees. "The time that it saves is unbelievable," says the chef. "We make desserts, doughs, dressings, mayonnaise. ...
