It's been a long evolution from bagel shop to bakery/cafe, but after 25 years, Bruegger's Enterprises Inc. says it has come full circle.
A quarter-century after opening its first shop on Congress Street in Troy, Bruegger's has grown into the country's No. 2 bagel chain, with 274 company- and franchisee-owned stores in 22 states. The company now sells 86 million bagels a year, including 4.5 million in 14 Capital Region stores.
"We Americanized the bagel," said Jim Greco, chief executive officer since 2003. "I think it's significant for any business to have succeeded for 25 years."
