FISH IS SO EASY to cook," says Elizabeth Woessner, chef-teacher at A Cook's Kitchen cooking school in Denver. "It's so versatile. You can poach fish, you can broil fish, you can saut fish, you can grill fish. Think of any method of cooking - you can do it with fish."
So why, then, are so many people apprehensive about cooking fish at home?
"I don't know," Woessner says. "I suffer from fish-fear myself sometimes. If you think about it, there are 17 million kinds of fish. It's not like beef or pork, which are always recognizable. With fish, you never know exactly what you're getting."
