Plaque in the arteries, known as atherosclerosis, can lead to the formation of dangerous clots, but new research reveals that phenols in olive oil may make blood less likely to clot. The study, published in August in the American Journal of Clinical Nutrition, revealed that people with high cholesterol who ate a diet rich in virgin olive oil had a lower concentration of lipids that promote blood clotting. Different types of olive oil have been found to contain different phenol contents. As a result, researchers believe that olive oil with the highest concentration of phenols may provide the most cardiac benefits.
