Specialty cheese production in Wisconsin rose 3 percent in 2007 to 399 million pounds, setting a record and continuing to lead the nation, the National Agricultural Statistics Service reported.
Specialty cheeses, a value-added product that command a premium price for their unique qualities, made up 16 percent of the state's total cheese production last year, up from 13 percent in 2003, according to the NASS report.
Of the state's 124 cheese plants, 83 manufacture at least one type of specialty cheese. In 2006, 80 of 122 produced specialty cheese.
