Cheese usage in the United States has shown steady growth for several decades; it has been the stalwart of dairy sales growth, soaking up an ever larger percentage of the milk produced in this country.

With the U.S. Department of Agriculture's recent release of per capita cheese consumption for 2006, I took the opportunity to retrace growth variety-by-variety over the past 20 years.
