Cheesemakers in Wisconsin produced a record 399 million pounds of specialty cheeses last year, a 3 percent increase over 2006, Gov. Doyle's office announced.
A new report by the National Agricultural Statistics Service found that 83 of the state's 124 cheese plants make at least one type of specialty cheese. Three plants producing specialty cheese were added in the past year.
