PASTA WITH PRAWNS & CRUNCHY VEGETABLES
(SERVES 2) 25g butter 250g whole, shelled prawns Pinch of salt, cayenne andfreshly ground black pepper 1tbsp cognac (optional) 120g penne pasta 1tbspolive oil 1 red chilli, finely chopped 40g carrots, finely chopped 40g pakchoi, shredded 40g courgettes, chopped finely 40g mange tout, halved 20g waterchestnuts, halved 100g raw, shell-on tiger prawns 2tsp chopped fresh coriander
