LANCASTER, WIS. -- In southwestern Wisconsin, the sound of a growing segment of the dairy industry is not "Moo!" but "Maa!"
Fueled partially by growing interest among American foodies in specialty and artisanal cheeses, the number of goat cheese factories in Wisconsin has increased in recent years, including the opening this spring of a large, state-of-the-art facility in Grant County.
To supply enough goat milk to meet the demand for cheese, there are now more than 600 goat milk dairies in the state, with 50 of those coming on line just in the last year.
