ON WARM SUMMER evenings, I often serve a chilled salad for my entree, and this Chow Mein Salad is one of my favorites for entertaining. I always make both the salad dressing and the noodles a day or two ahead of time.
It is important to make the dressing in advance so that the flavors have time to marry. I make the noodles ahead of time and store them in an airtight container strictly to save time. The reason for making the noodles, rather than buying them already prepared, is to cut down on the calories from fat.
