It is arguably the most controversial dish served in restaurants, being both revered and reviled in equal measure.
To those who love the taste and texture, foie gras epitomises gourmet dining and the art of classic French cookery.
And yet there is no way of getting round the fact that the production of this culinary delicacy involves an element of animal cruelty, although its advocates would say it is cruelty with a small "c" rather than the block capitals favoured by the animal rights movement.
