It's time to keep oven use to a bare minimum, and one way to do that is with simple recipes that call for cool fresh cheeses such as mascarpone, feta, fresh mozzarella and ricotta.
Although there are fine imported fresh cheeses, Wisconsin also produces comparable versions that are generally much less expensive. Here's a primer on fresh cheeses that work well in summer recipes and with crisp white wines.
