When oleomargarine was developed by a French pharmacist in the mid-1800's, it was the only butter substitute available. Now there are more than a dozen different varieties of margarine and margarine substitutes on grocers' shelves. You can pick from regular margarines, diet margarines, light margarines, spreads, margarine-butter blends and most recently, nonfat margarines.
