Background

Food is ubiquitous in our society and is an important feature in social activities, particularly for children. Food allergy has recently been increasing in prevalence [1, 2]. In the United States, food allergy affects up to 4% of the adult population and 6-8% of children [3, 4, 5]. Ninety percent of schools enroll more than one child with a food allergy, and half of these schools have had a child experience an allergic reaction in the past two years [6].
