When I was a child, a sweet potato was the subject of a common science project that involved inserting toothpicks into the vegetable and suspending the root end in a jar of water. Over time, the sweet potato would sprout long, leafy vines. Having learned a lesson about plants and plant growth, many of my friends tossed out their experiments or kept them as indoor plants, but at my house the plant's leaves were put to culinary use.
