If you don't drink skim milk because you're no fan of the taste or its blueish hue--even though you know it's better for you than 1% or 2%--there may soon be a fat-free alternative in the supermarket cold case.

Beginning this fall, a few dairies on the East and West coasts will fortify skim milk with a newly developed product called Replace. Developed by the U.S. Department of Agriculture in collaboration with Golden Jersey Products, Inc., of Vero Beach, Florida, Replace contains Oatrim, a natural fat substitute derived from oats.
