Let's get this straight. A sweet potato is not a yam.
Yams grow in the tropics. Sweet potatoes, though identified with the South, grow quite well here in the Midwest. With names like "Jersey," "Centennial," "Garnet" and "Jewel," sweet potatoes are sweeter and more delicate and nuanced than any yam, a starchy tuber, can ever be. Their colors range from soft golden to rich maroon, and they can taste of chestnuts, honey or molasses, distinctly mild and earthy sweet.
