CARPINTERIA, Calif. -- CKE Restaurants, Inc. (NYSE: CKR) is celebrating the opening of its 100th Carl's Jr.([R]) restaurant in Mexico. Located in Aguascalientes, Mexico, the newly-built 100th unit is operated by licensee Ricardo Cardenas.
