HERMOSILLO, Sonora--Dec. 27--Beef, home grown on the open range and cooked in mouth-watering strips over an open flame, is the pride and joy of this ranching state.
Carne asada, as Sonorans call grilled beef, is the main dish most often served at parties and the most popular item on the menu at restaurants from one-cart taco stands to the finest steakhouses.
"We are a very carnivorous state," says Sergio 'Pecky' Torres, owner of Agropecuaria Torres beef-packing company in Hermosillo.
Try as they might, Sonoran cattle ranchers can feed only 60percent of the demand, Torres says.
