A smart tip: With a large serving spoon, gently scoop portions from the soft center out - it's easier that way. To make it look great on the plate (instead of like a chocolate blob), place portion on one side of plate; garnish the other with a few raspberries. For place settings, go formal (like the ivory and gilded plates, left) or fun (as with the scalloped dish and square plate, right).
