Omelets are so versatile they can be served any time of the day or night. They make a perfect light supper before a New Year's Eve party or an early morning snack after the party. Or, they would be a great brunch on New Year's Day.
Omelets require very little preparation. All you need are lots of eggs and assorted fillings and toppings. Popular fillings are mushrooms, grated cheese, chopped green onions, chopped bell peppers, crumbled bacon, chilies, herbs, chopped ham and sliced olives.
