Growing scientific evidence about the relationship between diet and health has increased the need for information about the quality and composition of the American diet. Diet-related chronic diseases - including coronary heart disease, cancer, stroke, and diabetes - account for nearly two-thirds of all deaths in the United States each year and cost society an estimated $250 billion annually in medical care and lost productivity (see "The American Diet: A Costly Health Problem," elsewhere in this issue).
