Mar. 21--The National Cheese Exchange in Green Bay will stop trading April 25, a week before new dairy trading begins on the Chicago Mercantile Exchange.
"The opening of this new cash market is a major step forward," said Larry Jensen, co-chairman of a dairy industry committee that studied alternatives to the cheese exchange.
"The Mercantile Exchange is one of the world's largest commodity exchanges with the experience, expertise and safeguards to ensure the integrity of trading," Jensen said.
Critics of the National Cheese Exchange have said it is prone to manipulation by a handful of big dairy companies.
