"The correlation between the structural characteristics of some representative classes of flavonoids and their antioxidant activity was studied," scientists in Bucharest, Romania report.

"A simple method based on isothermal CL measurements for estimating the antioxidant activity of flavonoids was used. The obtained results suggest that antioxidant activity depends both on substitution pattern of hydroxyl groups of the flavonoid skeleton and the presence of unsaturation at the C2 - C3 bond," wrote D.A.
