Roasted rosemary
fillet of beef with
pinot noir sauce
Prep time: 20 minutes
Cooking time: 42 minutes
1 (4-lb) oven-ready tied center-cut fillet of beef
2 Tbsp fresh rosemary leaves
4 cloves garlic
1/4 cup country-style Dijon mustard
2 tsp each kosher salt and
freshly ground black pepper
2 Tbsp olive oil
Pinot noir sauce
1 cup pinot noir or other dry red wine
1 shallot, minced
3 cups reduced-sodium beef broth
1 sprig rosemary
1 Tbsp tomato paste
2 Tbsp unsalted butter
Freshly ground pepper
Accompaniments: creamy polenta and sauteed kale
