New name, varieties put fat-free in fat city.
It was burdened for years with a name considered as unappealing as its watery texture and bluish tint. But skim milk still kept on rising toward the top of the fluid milk business.
Now, with a new "fat free" name and a host of new marketers with new products, skim milk stands to become an even bigger player.
New additives, formulations and flavors coming into the fat-free milk segment also provide an edge most dairies have lacked in the fluid milk business - genuine points of difference upon which to build brands.
