1 box (12 ounces) quinoa, prepared according to package directions
2 tablespoons margarine
1small zucchini, finely diced
1 small carrot, peeled, finely diced
1 small yellow squash, finely diced
1/2 teaspoon garlic powder
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon ground black pepper
3-4 cucumbers (8-10 inches each), peeled
Olive oil
Vinaigrette
1 grapefruit, halved
2 tablespoons extra-virgin olive oil
1/4 teaspoon salt
