Three years ago, salmon was almost impossible to find on menus even in large cities like Beijing and Shanghai. Today, salmon sashimi is a must at seafood banquets. That may be the only form in which the fish is familiar to mainland Chinese, but it's a start.
Why sashimi? Apparently pioneer distributors of salmon in the People's Republic regarded salmon as strictly a luxury item, and advised chefs in luxury restaurants to prepare it in that form. But the Norwegian Seafood Export Council (NSEC) is now trying to increase salmon awareness generally.
