To millions of consumers, lunch is nothing if doesn't include a big, juicy hamburger. Yet there remains a portion of the population that shuns hamburgers because they believe ground beef contains too much dietary fat. The nutrition facts are: 73%-lean ground beef contains 250 calories and 17 grams of total fat per cooked 3-ounce serving. Hardly a low-fat option.

As those in the foodservice industry are well aware, however, efforts by ranchers to breed trimmer cattle and by packers who cut more fat from carcasses have paid off. According to one commodity group, ground beef today is on average more than 10% leaner than it was a decade ago.
