Many engineers know the advantage of getting equipment manufacturers involved early in a project. A cooperative project between Major Smith Inc. and Waukesha Cherry-Burrell (WCB) to improve Major Smith's cheese sauce operation reinforces that belief.
WCB has one of the most sophisticated pilot plants in the processing industry in Jeffersontown, Ky. One of the developments at the facility, called the Proving Center, has been the use of corrugated tubular heat exchangers for viscous and fluid products in lieu of mechanical swept-surface heat exchangers.
