Crunchy baked cheese finds diet food niche
Paul Scharfman is smiling a bit broader these days when he says, "cheese." What started out as a novelty cheese snack two years ago for Scharfman's Specialty Cheese Co. Inc., Lowell, Wis., is garnering endorsements as a low-carbohydrate diet food from several of the nation's leading author-physicians.
