Since 1934, the Axler family, owner of Springfield Smoked Fish, has used recipes carried with them from Eastern Europe to offer Bay State Jews a variety of authentic smoked fish. But the certified kosher mainstay has hit rough times as it tries to keep up sales of a premium product with an aging brand image.
"[The business] has to head north, as far as increased sales go, because it won't survive if it doesn't," said Alan Axler, vice president of the company.
