& Goat Cheese Panini

2 Tbsp, olive oil
2 sweet onions (1 lb. ea.),
thinly sliced
Salt and pepper
1/2 tsp. chopped fresh thyme leaves
8 center slices (1/2 in. thick)

1. In nonstick 12-inch skillet, heat oil on
medium one minute. Stir in onions, 1/2
teaspoon salt, and 1/4 teaspoon freshly
