I found the Dominican Republic that I was looking for in a small town on the east coast of the country called Bayahibe. Here I sat under a thatched roof on the patio of an Italian restaurant that affords a great view over a tiny bay. It was undeveloped. A handful of pangas and sailboats bobbed on the water as pink hues spread across the sky at sunset.

The restaurant, the Mare Nosta, is five-years old and run by an Italian woman from Milan. The moderately priced eatery features homemade pasta, tasty Italian appetizers and fresh seafood.
