Liquid nitrogen dosing is moving beyond beverage cans into new containers--and new products.
A little drop of liquid nitrogen can make a big splash.
Depositing small amounts of liquid nitrogen into a bottle, jar or other airtight package just before sealing can accomplish two things. When the nitrogen is exposed to ambient temperatures, it expands, driving out air from the package's headspace; if the sealing is timed correctly, the product will be protected from oxygen. And the expansion of the nitrogen builds a slight pressure within the package, allowing it to stand up better to handling and stacking.
