HUEVOS RANCHEROS
Serve this hearty Mexican dish with any or all of the following: sliced avocado, black beans, mixed salad greens, and sour cream.
PREP: 10 minutes COOK: 20 minutes
1 tablespoon plus 2 teaspoons
vegetable oil
1 medium onion, coarsely chopped
1 small garlic clove, minced
1 jalapeno chile, seeded and minced
1 can (14 1/2 ounces) tomatoes
l/4 teaspoon salt
8 large eggs
8 flour or corn tortillas (6-inch
diameter), warmed
1 tablespoon chopped fresh
