THIS stunning pudding uses seasonal apricots and is perfect when you have a crowd to feed. It's very good with vanilla ice cream or slightly sweetened mascarpone. SERVES 6-8 Ingredients 200g/8oz plain flour, plus extra for dusting 2 tsp cinnamon 140g/5oz cold butter, cut into small chunks 85g/3oz light muscovado sugar 1 egg, separated 1 tbsp polenta 700g/1lb 9oz apricots, halved and stoned 1 tbsp demerara sugar
