Warmer weather brings a time of rejuvenation, a time to revitalize our systems, which have become sluggish from the cooler weather and diet.
It's time to begin to seek out those growing things that are full of vibrant elements to aid our bodies.
But just what is a green? Greens are plants which can be used raw or cooked like any cultivated green vegetable like lettuce or spinach. A potherb is any plant that must be cooked in some manner in order to be eaten. Shoots are the new growths of many plants.
Many greens and potherbs are available from early spring to late summer. Shoots and stems may be edible only in the early spring.
