SPECIALTY CHEESE IS A GROWING INDULGENCE FOR CONSUMERS ACROSS THE U.S. In the latest 52 weeks ended March 28, consumers spent $2,463 per store per week on specialty cheese nationally, up 4.3% compared to the previous 52-week period. Specialty cheese accounts for 12.7% of total deli department dollar sales, which includes deli meat, prepared foods and service cheeses.

The specialty cheese category includes 33 different flavors and the top eight flavors represent 55.4% of sales.
