As the number of Americans living with celiac disease increases, people who can't tolerate gluten have a wider array of foods to choose from - everything from gluten-free pound cake to chicken nuggets.
But pricing and food selection hurdles remain, and the federal government has yet to regulate what qualifies as gluten-free, prompting worries.
"It's difficult to find safe products," said Kim Ullner, who started 1-2-3 Gluten Free Inc. in 2004 out of frustration at locating tasty desserts such as birthday cakes for relatives with celiac disease.
