The idea is to get off the known path; to venture beyond the ordinary and the easy. To see less-spoiled country; to view more wildlife and fewer people; to reach better fishing or hunting; to feel freer. To up the physical challenge; to evoke a sense of the unexpected and adventure.
Of course off-trail hiking, or "bushwhacking," as it has long been called, is not for everyone. A fairly robust level of health and stamina is essential.
