THE new Liverpool Hilton may lay a claim to be the city's swishest hotel, but that doesn't mean it's forgotten where its roots are.
At one level that applies quite literally, as the foundations of the Hilton are partly built on those of the old Custom House, demolished after war damage yet commemorated in the name of one of the hotel's bars.
And with executive chef Matt Burns coming from a Liverpool family, even though he was not brought up in the city, the authentic flavour of the Mersey is never going to be too far away.
High-ups in the Hilton empire may raise an eyebrow or two at the inclusion of Scouse, ...
