Automated Feta cheese machine processes 30,000 lb of milk per hour; improves yield and quality and reduces labor
Curds of Feta cheese are very fragile and break up easily. As a result, Feta production in the United States traditionally has been a labor-intensive batch operation. Milk is coagulated in individual vats, and curds are manually transferred from the vat to the forming hoops to avoid damage.
