Tempering the heat of chilies and adding sweetness, creaminess, and thickening, coconut milk is used in many Southeast Asian curries, including those on pages 133 and 135. The naturally sweet milk is also delicious in mixed drinks or blended with ice cream for a coconut shake. For breakfast or dessert, spoon warm milk over sliced ripe bananas.
