Despite the size and potential of the food and beverage industry, analytical instrument makers have never fully exploited the market. This may be due in part to the conservative nature of the industry, which is not known for being "high-tech" and has been slow to adopt new technologies.
During the global recession in the early 1990's, government expenditures, academic grants, and industry spending were cut back and demand for new instruments declined. Today, however, the industry has recovered and is now one of the biggest industrial consumers of analytical instrumentation.
